I had the same scenario with some long-grain oak cutting boards that were finished with mineral oil. Just give the table a light sanding with 180 or 220 grit to knock .... You can also raise the grain and then wet sand it with the oil you plan to use. That will really clean up the surface, and massage a little more oil in to the wood.
